I have heard that certain ordering nodes at OSNs can see all the transaction data in the network? How can I avoid this and maintain privacy for my data?

Yes, OSNs can see all the transaction data. And these nodes are not just any node, they are trusted organizations or organizations who are allowed to see everything happening in the network.
