Filter only certain columns in Excel Pivot Tables

I have a table with a list of dispatched and planned order dates that looks like this:

I'm attempting to create a pivot table from this. My problem is that I just want it to be filtered by each specific location (in this case Uberherrn and Willebroek)

The pivot table that results looks like this.

Is it at anyway feasible to restrict the results to simply display the Planned and Shipped columns for each area? The graphic below represents my ideal output, with the ability to modify the Planned and Dispatch columns based on a city filter (to choose Uberherrn or Willebroek to show planned and dispatched for either based on the filter)

Is this possible? I've been trying to figure it out but I can't quite get it right..

Pivot Tables are mainly designed to create aggregated data from raw data. Your input is already aggreated so no, you cannot benefit from a Pivot Table.

Let's just say it's like a summary report. To benefit properly from a Pivot Table features your data should look like this:

Notice how I was able to create a Pivot Table on the right side based on this raw data, and then filter what values of Field I want to see.
